Roasted Tomato Bruschetta


4 Roma Tomatoes, chopped
2 tbsps Olive Oil
1 tsp salt
1 tsp fresh or dried basil
1/2 garlic paste
1 loaf italian loaf bread
1 cup shredded Mozerella cheese


  1. Heat oven to 400 degrees
  2. Mix tomatoes, 1 tbsp olive oil, salt, and basil together
  3. Place on oven safe dish and roast in oven for 20 minutes
  4. Cut loaf in two pieces long ways
  5. Mix the remaining olive oil and garlic and spread on the bread
  6. Sprinkle the cheese on top
  7. Place in oven and toast until cheese is melted
  8. Remove the bread and tomatoes
  9. Spread tomatoes on bread and cut into pieces.
